Ingredients
15 oz. pumpkin puree4 eggs
1/2 cup veg oil
1/2 cup unsweetened applesauce
3 cups sugar
3.5 cups all purpose flour
2 teaspoons baking soda
1.5 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1 cup chopped walnuts
1/4 cup raisins
Directions
Preheat over to 350 degrees. Grease and flour one extra large loaf pan, a Bundt pan, two large loaf pans, or 3 small loaf pans. Set aside.Mix pumpkin, eggs, oil, applesauce and sugar in a mixer. In a separate bowl, combine flour, soda, salt, and spices. Whisk to combine.
One low speed of mixer, combine the wet ingredients. Add the dry ingredients in thirds until combined. Then add the walnuts and raisins.
Pour mixture into loaf pan(s) and cook 50 minutes or until a toothpick comes out clean.
